Pickled Onion

Try on top of pork tenderloin or with a roast beef slider.

Ingredients:
1 onion (red or yellow depending on your personal preference), finely sliced
1/2 cup red wine vinegar (apple cider vinegar will also work)
2 teaspoons sugar
1 tablespoon salt
3 tablespoons white vinegar

1. Combine all ingredients in a medium saucepan, bring to a boil

2. Remove from heat and let steep for 20 minutes

3. Let cool

Garlic Peppers

Great topper for burgers or steak!


Ingredients:
5-10 mini sweet peppers, finely sliced
2-4 cloves garlic, minced
1/4 onion finely chopped
1 tablespoon butter
1 teaspoon oil
1/2 teaspoon salt

1. melt butter and oil in small skillet on med-low heat

2. add garlic, onion and salt, brown for 1-2 minutes

3. add sliced peppers, cook for 5-10 minutes or until lightly browned, stirring frequently




 

Mixed Green Salad

This is my go-to salad... (enough said). 

Ingredients:
8 oz  50/50 mixed greens/spinach blend
1 honeycrisp apple, thinly sliced
4 tablespoons goat cheese crumbles
1/2 teaspoon salt
1/4 teaspoon lemon juice (fresh squeeze over salad- go light)
1 tablespoon candied nuts (walnuts are my preference)
1 tablespoon craisins
1 tablespoon fried onion straws
2 tablespoons creamy balsamic vinegar dressing

1. mix together, serve.

Tips:
*wait to add dressing until just before serving.
*add sliced berries, grapes, or cherry tomatoes when in season/ if desired
*try fried jalapeno straws for a kick
*don't like goat cheese?  try feta.  or whatever cheese you like 
 

Fan Sliced Golden Parmesan Potatoes

Potatoes slow baked with chives and garlic.  Topped with a crispy layer of parmesan cheese and panko bread crumbs. 


Ingredients:
8-12 golden potatoes, fan sliced
2-3 cloves garlic, minced
1 teaspoon salt
1 teaspoon chives, chopped
1/4 cup vegetable broth
1/2 stick butter
1/4 cup Parmesan, shavings
2 tablespoons panko bread crumbs
1 pinch sea salt

1. Pre-heat oven to 425 degrees

2. Fan slice potatoes (see link in ingredients for photo)

3. Place side by side in small-med oiled casserole dish

4. Spread salt, garlic and chives evenly over top of potatoes

5. Melt butter in microwave safe dish, add broth, and pour mixture over potatoes

6. Bake covered for 30 minutes or until potatoes are cooked through

6. Sprinkle top of potatoes with parmesan shavings, panko bread crumbs, and sea salt

7. Place under broiler at low for 2-4 minutes until cheese is melted and slightly browned (watch closely to prevent burning.

Mushroom Cream Sauce

This is a great sauce for almost any meat. Pork tenderloin, tri tip steak, or grilled chicken breast with pasta are some of my faves.

Ingredients:
6 cremini mushrooms (substitute portobello mushrooms if you'd like), washed and finely diced
1/2 cup heavy cream
2 tablsespoons butter
1 clove garlic, minced
1/4 red onion, finely chopped
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon red wine (can sub 1 teaspoon balsamic vinegar) 

1. Melt butter in medium skillet on medium heat

2. Add onion and garlic, heat until onion is clear and garlic is lightly browned, stirring frequently

3. Add mushrooms, reduce heat to med-low and stir; cook 3-5 minutes stirring frequently until mushrooms brown 

4. Deglaze with red wine (add red wine and wisk gently for 20 seconds)

4. Whisk in heavy cream, let warm, stirring as needed to prevent burning.  Simmer until sauce begins to thicken.* 


5. Seasons with salt and pepper to taste

*If needed, increase heat to light boil for 30 seconds, stir and remove from heat.

Gorgonzola Cream Sauce

I came up with this deliciousness to top a pork tenderloin for a holiday party a couple years ago now. It has been requested by family and friends many times since.  

Ingredients:
4 ounces Gorgonzola, crumbled or chunked in 1 inch pieces
1 cup heavy cream
1/2 stick butter
1/4 teaspoon salt
1 teaspoon black pepper

1. Melt butter in medium sauce pan on medium heat

2. Add in Gorgonzola and wisk in heavy cream

3. Season with salt and pepper

4. Stir frequently until Gorgonzola is melted and sauce begins to thicken 


5. Bring to a soft boil, stir regularly for 60 seconds then remove from heat

Pork Tenderloin Crostini

Slow roasted pork sliced thin atop garlic french bread, topped with pickled onion, garlic peppers, and gorgonzola cream sauce

Gorgonzola Cream Sauce:
Ingredients:

4 ounces Gorgonzola, crumbled or chunked in 1 inch pieces
1 cup heavy cream
1/2 stick butter
1 teaspoon salt
1 teaspoon black pepper

1. Melt butter in medium sauce pan on medium heat

2. Add in Gorgonzola and wisk in heavy cream

3. Season with salt and pepper

4. Stir frequently until Gorgonzola is melted and sauce begins to thicken

Pork Tenderloin:
Ingredients:
1 pork tenderloin (1-2lb)
1 tablespoon olive oil

3 cloves of garlic, minced
1/2 tablespoon salt
1/2 tablespoon pepper
1/2 tablespoon Italian seasoning
1 tablespoon pork rub (look for one with brown sugar and smoke flavors)

1 apple, cored and sliced
1 yellow onion, sliced
1/2 cup vegetable broth
1/2 stick butter

1. Mix seasonings and minced garlic together in small dish

2. Rub pork tenderloin with seasoning mix. If planning ahead, place seasoned tenderloin in plastic bag and let the tenderloin marinade ahead of time (even just for the morning of will work). 

3. Pre-heat oven to 350 degrees

4. Slice apple and onion, place in bottom of medium casserole dish

5. Warm oiled skillet on stove top on medium heat. Melt tablespoon of butter in skillet then brown all sides of tenderloin for 30-60 seconds each side (just until pink is gone)

6. Place browned tenderloin on top of apple and onion layer in casserole dish

7. Melt remaining butter in skillet, add broth, stir to deglaze skillet; pour liquid on top of tenderloin in casserole dish

8. Place in over, covered, for 40-50 minutes until internal temperature reaches 155 degrees.

9. Remove from oven and let rest 10 minutes before thinly slicing


Crostini
:

Ingredients:
1 baguette, sliced in approximately 1/2 inch pieces
1 stick butter
3 cloves garlic, minced
1 tablespoon Italian seasoning
2 teaspoons sea salt

1. melt butter, garlic, seasoning and salt in small bowl (microwave 15-30 seconds)

2. arrange bread side by side on cookie sheet and brush butter mixture over bread

3. brown in oven under broiler on low for 1-3 minutes, checking frequently.



Layer thin slices of pork on top of crostini, top with pickled onion, garlic peppers, and drizzle with cream sauce.  Enjoy!
