This yummy side came out of needing to take a dish to a potluck Thanksgiving where all of the traditional side dishes were already accounted for. Traditional sweet potatoes were revamped to create a savory casserole with a touch of sweet.
Ingredients:
2-3 apples peeled and diced
4-5 Sweet Potatoes (depending on size)
1 1/2 cup dry oats
3/4 cup packed brown sugar
1/2 tbsp. salt
tbsp. cinnamon
1/2 cup raisins, dried blueberries, and/or dried cranberries
1 cup apple juice
1 cup butter
1. Boil the sweet potatoes in water (with skin) for 15-20 minutes. Drain and let sit until cool enough to handle. Peel and dice into 1 inch cubes.
2. Dice apples and line bottom of casserole dish with a solid layer of apple.
3. Add layer of sweet potatoes on top of apple layer.
4. Mix dry ingredients together in a bowl.
5. Cut butter into dry ingredients and mix into a soft crumble then spread on top of sweet potato layer.
6. Pour apple juice evenly over the top.
7. Bake covered 45-60 mins at 400F. Remove cover for last 10 minutes to brown top.
*more butter and seasoning can be added to the sweet potato layer for taste.
